Several gigs as a chef included representing Philippines in Festivals, creating innovative cigar with food and wine pairings… my chocolate dinners from start to finish were thought to be insane and out of bounds until Euro TV documented one menu which gave rise to chocolate food and also wine pairings the next years and onwards.
