Try my version of this super delicious Visayan/Mindanao soup/stew made with beef off-cuts!
Awesome textures and flavors give this soup a great refreshing vibe, super delicious with rice or great with an ice cold beer!
Ingredients:
1⁄2 kilo Cow face (cut into 2 1⁄2 inch pieces)
2 pcs cow’s feet
200 grams sliced onion
2 liters water or stock
2 tbsp. carrots, finely chopped
5 tbsp. achuete oil
100 grams sliced leeks
3 tbsp. tomato paste
1⁄2 pack sibut
1 Tbsp. liquid seasoning
1⁄2 tbsp. sinigang mix powder
4 tbsp. patis
2 tbsp. toyo
3 pcs bay leaves
2 stalks lemon grass (bruised)
1⁄2 tsp. black pepper
1⁄2 tsp. white pepper
1 pcs sili labuyo (chopped)
1/4 tsp. sea salt
1 tsp. salt
3 cloves garlic
2 tsp. sugar
Optional:
1 tbsp. potato starch
2 tbsp. water
(To bind)
Procedure:
1. Brown Meat in achuete oil and Tomato paste.
2. Add Onion, leeks, carrots, garlic, lemon grass on medium heat.
3. Add all other ingredients and add water
4. Pressure cooks for 25 minutes
5. Bund id very oily with potato starch and water slurry
6. serve with freshly steamed rice
