Pork adobo is definitely one of the most iconic Filipino dishes known all over the world, and there as just as many variations to it as there is the people who cook it. This Capampangan Style adobo is close to my heart, as it comes from my hometown.
A different take to the usual adobo, this has no soy sauce in the recipe and relies of building up layers and layers of flavor and caramelization. As they say, its taste is so good and tempting, it must have been made by the devil himself!

Ingredients
1 ½ cups Pork cut into 1” cubes
1 ½ cups Chicken
½ cup Chicken Heart
½ cup Beef liver, cut into ¼” cubes
½ cup Pork Kidney, cut into 1” cubes
½ cup Chicken Giblets, cleaned
¼ cup Chicken Blood, cut into 1” cubes
1/3 cup Vinegar
2 tbsp. Corn oil
½ tbsp. Cracked Pepper
2 tbsp. Garlic
¾ tbsp. Salt
4 tbsp. Fish Sauce
2 cups chicken stock
