Ingredients
4–8 pieces cube steak
1/3 to 1/2 cup self-rising flour
2 cups water
Salt and black pepper, to taste
Cooking oil (vegetable, canola, or your preferred oil) – enough to coat the bottom of the skillet for frying
Directions
Season and Dredge the Steak
Salt and pepper one side of each cube steak. Place the seasoned side down on a plate with the flour and coat that side generously. Salt and pepper the top side, then turn the steak over and coat that side liberally with flour as well.
Brown the Steak
Heat enough oil to coat the bottom of a skillet over medium heat. Place the cube steak in the skillet and brown the first side for about 3 minutes. Turn the steak over and brown the other side. Remove the steak from the skillet and set aside.
Make the Roux
Using the remaining flour from breading the steak, add a little at a time to the skillet drippings and stir until you form a light brown roux. Allow the flour to cook for a minute or two to remove the raw flour taste.
Make the Gravy
Slowly add 1 cup of water, stirring constantly. Add more water gradually (up to 2 cups total) until you reach a smooth gravy consistency. Be sure to scrape up all the browned bits from the bottom of the skillet—that’s where the flavor is.
Finish in the Oven
Return the cube steak to the skillet and spoon some gravy over the top. Cover the skillet with aluminum foil and place in a 350°F oven. Cook for 1 hour.
Check for Tenderness
Check the steak with a fork. If it’s fork-tender, it’s ready. If it still feels tough, return it to the oven for 15–20 more minutes.
Rest and Serve
Remove from the oven and let rest for 10 minutes. Spoon the gravy over the steak, serve, and enjoy.
