🌿 Ingredients
Ash gourd (ಬೂದುಕುಂಬಳಕಾಯಿ) – 2 cups (peeled, deseeded, diced)
Green chilies – 2 (slit or chopped)
Curry leaves – few
Fresh grated coconut – 3 tbsp
Turmeric powder – ¼ tsp
Salt – to taste
Coriander leaves – for garnish
For Tempering (ಒಗ್ಗರಣೆ):
Oil – 2 tsp
Mustard seeds – ½ tsp
Curry leaves – few
Cumin seeds- 1tsp
Dry red chili – 1 (broken)
Hing – a pinch

to a mixer grinder
Green chilies – 2 (slit or chopped)
Curry leaves – few
Fresh grated coconut – 3 tbsp
“Grind into a coarse powder.” ✅

🍲 Method
Heat oil in a pan, add mustard seeds. Once they splutter, add mustard and cumin dry red chili, curry leaves, and hing.
Add diced ash gourd, turmeric, green chilies, and salt. Mix well.
Sprinkle a little water, cover, and cook on low flame until soft (don’t overcook, ash gourd cooks quickly).
Once done, add grated coconut and mix gently.
Garnish with coriander leaves.

🍴 Serving
Serve hot with steamed rice, rasam, or chapati.
Simple, light, and healthy side dish.
