A family recipe that I wait for every year. Simple ingredients, unbelievable flavor.
Summer Tomato Salad
Serves 2 to 4
1-1/2 pounds of beefsteak or similar type of tomato
1/2 cup of extra virgin olive oil
2 to 3 tablespoons of red wine vinegar
1 medium garlic clove, sliced
2 to 4 Fresh basil leaves, torn or chopped
1/2 teaspoon salt, or to taste
Cut the tomato into bite sized pieces, place in a medium bowl along with the other ingredients, toss to combine. Cover the bowl and set aside to allow the salt to draw the juices out of the tomatoes. About one hour. Do not refrigerate.
Serve with a fresh crusty artisan style bread. Enjoy!
