Sticky Date Pudding Ingredients 🍰
180g pitted dates (chopped)
180mL black tea (boiled)
½ tsp baking soda
90g unsalted butter
100g light brown sugar
2 eggs (room temp)
150g flour
1tsp baking powder
⅛ tsp salt
1tsp vanilla extract
¼ tsp coffee powder
80g unsalted butter
100g light brown sugar
120mL heavy cream
15g unsalted butter
½ tsp vanilla extract
Pinch of salt
1tsp dark rum or whisky
Recipe 🍰
1. Preheat oven to 175C and line an 18–20 cm square tin with parchment
2. Combine dates, hot black tea, and baking soda in a heatproof bowl
3. Stir and let stand for 10min then mash lightly with a fork
4. In a small saucepan, melt butter over medium heat and cook until nutty and golden brown
5. Immediately pour into a stand mixer bowl and let cool
6. In that stand mixer, add brown sugar and beat 1min until glossy
7. Beat in eggs, one at a time then add vanilla and instant coffee
8. Add flour, baking powder, salt; mix just to combine
9. Fold in the warm date mixture until uniform and shiny
10. Pour batter into the tin, loosely tent with foil and bake 25-30 min, until centre springs back and a skewer comes out with moist crumbs
11. Make sauce: melt butter, brown sugar and cream together then simmer 3–4 min until smooth and slightly thickened. Remove from heat, stir in butter, vanilla, salt, and rum
12. Once out of the oven, poke the warm pudding several times with a skewer, then pour ⅓ sauce evenly over the top to soak
13. Cover loosely with foil and rest 5 min
14. Cut the pudding while it’s still in the tin and remove individual squares with an offset spatula
15. Serve warm with remaining sauce, ice cream / whipped cream, and finish with a few flakes of sea salt
