Christmas Madeleine Ingredients 🍰
100g unsalted butter
2 tsp unsalted butter
2 eggs (room temp)
85g caster sugar
15g light brown sugar
100g flour
¾ tsp baking powder
Pinch of salt
1 lemon zest
2 tsp vanilla extract
200g coating chocolate (not couverture!)
Gel food colour
Recipe 🍰
1. Melt butter over medium heat until golden brown, then strain
2. Whisk in 2 tsp butter to stop cooking and preserve aroma
3. In a large bowl, whisk eggs and sugars on medium until pale, thick, and at the ribbon stage
4. Sift together flour, baking powder, and salt, then add lemon zest
5. Fold half flour mixture into egg mixture. Then fold in half the browned butter + vanilla around the edges
6. Repeat with the remaining flour, then remaining butter
7. Cover the batter with cling wrap, touching it directly and chill for 45min+
8. Preheat oven to 200C
9. Brush molds with melted butter
10. Pipe each mould about ¾ full then place tray in freezer for 10 min
11. Bake 6min at 200 C (initial high heat) then immediately reduce to 150 C and bake 5min (gently finishes)
12. Cool on a wire rack, dome side up
