This isn’t the traditional method that takes days to ferment—this is the quick version I use all the time to look after my gut. It’s a simple, tangy side dish that comes together in just a couple of hours using a bag of coleslaw mix and some lemons.
Growing up, my parents cooked a lot of Mediterranean food, and I realized looking after my gut health made a huge difference in how I felt. This recipe is super easy to prep, keeps in the fridge for weeks, and adds a nice crunch to any meal.
📝 The "Pro Keto" Twist:
On its own, cabbage and carrots are just veggies. To make this truly keto-friendly and hit that lower saturated fat goal, I drizzle extra virgin olive oil over it right before serving. It tastes amazing and boosts the healthy fats.
What you need:
• 800g Coleslaw mix (cabbage/carrot)
• Approx 16g Salt (about 2% of the veggie weight)
• 1.5 - 3 Lemons (juice)
