Someone very rightly said “ for the true taste of idli sambhar, it’s one of Chennai’s most authentic, and best ” and yes we are attempting to make a special style of sambar all the way from the streets of Madras in Triplicane. This style of sambar is very tasty and best suited for the the dunkin idlis in sambar and it taste.
INGREDIENTS [2-3 PERSONS]
1.TUR DAL - 100g
2.MOONG DAL - 100g
3.OIL AS REQUIRED
4.TURMERIC - 1/2 tsp
5.ONIONS - 250g
6.TOMATOES - 100g
7.GREEN CHILLI - 2 no’s
8.WATER AS REQUIRED
9.CORIANDER SEEDS - 50g
10.BLACK PEPPER - 10g
11.RED CHILI - 10g
12.URAD DAL - 10g
13.FRESH COCONUT - 20g
14.SHALLOTS - 150g
15.MUSTARD - 5g
16.RED CHILLI - 3 no’s
17.HING - 1tsp
18.CURRY LEAVES - 2 spring
19.TAMARIND JUICE
20.CRYSTAL SALT - TO TASTE
21.JAGGERY
22.CORIANDER
METHOD:-
1.Heat the cooker pan and fry with tur dal, moong dal, oil, turmeric 1/2 tsp, chopped onions, tomatoes, green chilli and mix well with water and cover with lid & cook.
2.Heat kadai and add oil, mix well fry with coriander seeds, black pepper, red chilli, urad dal, coconut pieces, shallots, then transfer into mixie jar, add some water and grind into paste.
3.Heat the kadai add oil, mix well and cook with mustard, red chilli, hing, curry leaves, tamarind juice and crystal salt, then add grinded paste and cook.
4.Now add jaggery, cooked dal, mix well cook with water and crystal salt, coriander and cook.
5.Serve it with idli.
