Some of the most important Idlis to be made are the very traditional idlis of Kancheepuram. From the very orthodox temples of varadaraja perumal in kanchipuram to the fisherman community uses the similar way of preparation and the main difference is the non use of par boiled in the temple cuisine. The speciality of this idli is that it is spiced up with use of dry ginger and peppercorns and other spices in the batter and tempered to give out an unique taste to the idli. Let's go for it know the secrets of making this Perumal idli.
INGREDIENTS [2-3 PERSONS]
1.PARBOILED RICE - 1cup
2.RICE - 1cup
3.URAD DAL - 1cup
4.WATER AS REQUIRED
5.GHEE - 1/2 cup
6.CASHEW NUTS - 10g
7.URAD DAL - 10g
8.CHANA DAL - 10g
9.MUSTARD SEEDS - 1tsp
10.BLACK PEPPER - 10g
11.CUMIN - 5g
12.CURRY LEAVES - 1spring
13.HING - pinch
14.DRY GINGER POWDER - 1tsp
15.SALT - TO TASTE
METHOD:-
1.In a bowl add parboiled rice,rice, urad dal, water and soak for 2-3 hours,
2.Then grind it and ferment for 6-8 hours.
3.Now heat the kadai and add ghee, mix well and fry with cashew nuts, urad dal, mustard seeds, black pepper, cumin, curry leaves, hing.
4.Then pour this mixture in batter and mix with some water, salt, now pour the as shown in video and cook on steam for 10-15 mins.
5.Take out and serve in a plate with sambar & chutney.
