This is a special method of making sambar by use of byadgi chillies which are very fruity in taste and gives astonishing bright red colour but doesn’t give heat of the chilli. Being a breakfast sambar need not to say that it is inclined to sweeter side goes very well with idli, Vada, Dosa etc.
INGREDIENTS [2-3 PERSONS]
1.OIL - 2tsp
2.CORIANDER SEEDS - 50g
3.BYADGI CHILLIES - 70g
4.FRESH COCONUT - 1/2 no’s
5.CHANA DAL - 1tsp
6.URAD DAL - 1tsp
7.METHI SEEDS - 1tsp
8.CUMIN SEEDS - 1tsp
9.PEPPER SEEDS - 1tsp
10.OIL - 2tsp
11.MUSTARD SEEDS - 1/2 tsp
12.METHI SEEDS 1/2 tsp
13.RED CHILLIES - 3 no’s
14.CURRY LEAVES - 1 SPRING
15.DRUMSTICK - 1 no’s
16.BRINJAL - 2 no’s
17.HING - PINCH
18.SHALLOTS - 1 no’s
19.POTATOES - 1 no’s
20.TURMERIC - PINCH
21.SALT - TO TASTE
22.JAGGERY - 30g
23.TAMARIND JUICE - 30g
24.CORIANDER
METHOD:-
1.Heat the kadai, add oil, mix well and fry with coriander seeds, byadgi chillies, fresh coconut, chana dal, urad dal, methi seeds, cumin seeds and pepper seeds, then transfer it into a mixie jar and grind it.
2.Now in a kadai add oil, mix well and cook with mustard seeds, methi seeds, red chillies, curry leaves, chopped drumsticks, brinjal,hing, shallots, potatoes, turmeric and salt. Then add grinded mixture and mix well with water, cooked dal and cook.
3.Now add jaggery, tamarind juice, coriander leaves and mix well, then serve in a bowl and top up with coriander & tempering.
