Instant Pot Biryani with Goat or Lamb is an aromatic one-pot dish made with basmati rice and goat and flavored with spices and caramelized onions. This biryani recipe is South Indian style and very popular in marriages (Muslim style Mutton Biryani). Serve this Instant Pot biryani with raita (Indian yogurt relish).

Ingredients:
Mutton- 2 lbs
Oil- 1/4cup
Ghee- 2 tbsp
Bay leaf- 1
Cinnamon- 1
Cloves-3
Cardamom-3
Green chilly- 3
Onion- 1.5 cup
Ginger garlic paste- 2 tbsp
Tomato- 1 cup
Mint- 1 handful
Coriander leaves- 1 handful
Turmeric- 1/4 tsp (optional)
Kashmiri chilly powder- 1 tsp (optional)
Chilly powder- 1 tsp or as per your taste
Salt- 2 tsp or adjust as per your taste
Curd- 2 tbsp
Lemon juice- 1 tbsp
Rice- 3 cups
Water- 3 3/4 cup
Method:
1. Turn on the saute mode, after a minute add oil and ghee.
2. Once it's hot add bay leaf, cinnamon, cloves, and cardamom. Saute it until it releases a nice aroma.
3. Add green chilly and saute for 30 seconds, add onion and saute until it turns golden brown color. It takes approximately 10 to 15 minutes.
4. Add ginger garlic paste and saute for a minute, add 1 tbsp of water along with ginger garlic paste to avoid burnt bottom.
5. Add tomatoes, salt, yogurt, mint, and coriander leaves. Saute till the tomatoes are mushy.
6. Add chilly powder and mutton. Give it a mix.
7. Add 2 cups of water. Close the lid and seal the vent.
8. Pressure cook for 10 to 12 minutes. Once it's done cooking do release the pressure naturally for 10 minutes and release the remaining pressure.
9. Soak the rice for 30 minutes. Drain the rice and add it.
10. Add the remaining 1 3/4 cup of water and squeeze the lemon and give it a mix. Taste and adjust the spice and salt.
11. Close the lid and cook for 5 minutes. Make sure to turn off the keep warm button.
12. Once it's done cooking do release the pressure naturally for 5 minutes and release the remaining pressure.
13. Serve it hot with raita or spicy curry.
