Coconut Milk:
Coconut- 1 Cup
Water- 2.5 Cups
Masala Paste:
Ginger- 1 Inch
Garlic- 4 Cloves
Green Chilly- 1
Mint Leaves- Few

To Make Biryani:

Coconut Milk/ Water- 2.5 Cups
Oil- 2 Tbsp
Butter- 2 Tbsp

Onion- 2 Cups (Thinly Sliced)
Tomato- 1 Cup
Salt- 1.5 Tsp (or to taste)
Masala Paste
Marinated Shrimp
Coriander Leaves- Few
Mint Leaves- Few
Raita:
Yogurt- 1 Cup
Hing/Asafoetida- 1/4 Tsp (USA: https://amzn.to/3bL1PfT)
salt- 1/8 Tsp (or to taste)
Carrot- 1/4 Cup
Onion- 1/4 Cup
Coriander Leaves- Few
Method:
Marinate Shrimp with turmeric powder, chilly powder, garam masala, and Kashmiri chilly powder.
Wash and soak the rice for 30 minutes. After 30 minutes drain the water and keep it aside.
Make a masala paste to the blender jar add ginger, garlic, green chilly, a few coriander, and mint leaves. Sprinkle water if needed.
Make coconut milk fresh or canned. If you are making it fresh add 1 cup of coconut to the blender jar, add 2 cups of water, and blend it. Squeeze out the milk and dilute it with 1/2 a cup of water.
To make biryani: Select the saute mode, add oil and ghee, once the ghee is melted add it whole spices. Saute it until it releases a nice aroma.
Add onion and salt, saute it until the onion turns slightly brown. Add in the grounded masala paste and saute it for a couple of minutes.
Then add tomatoes and let it cook for 3 to 4 minutes.
Add the marinated shrimp and cook it for 3 minutes. Then add in mint and coriander leaves. saute it for a minute.
Add in drained rice and coconut milk. Taste and adjust the salt.
Close the lid and cook it for 6 minutes under high pressure. Release the pressure naturally for 5 minutes and then release the remaining pressure.
To make raita: To a bowl adds yogurt, thing, and salt. Whisk it and add onions and carrots mix it well. Garnish it with a few coriander leaves.
