Keto Gulabjamun | Keto Gulabjamun Pancakes | Keto Malpua | Keto Indian Sweets
Welcome to another session of Keto Twist . Festive season is here and I am experimenting with various Indian sweets .
So, here is a treat of Diwali Special Sweets which took me some tries and practice to get the correct way to make these gulabjamuns .
The main thing to keep in mind is :
accurate measurements ,
kneading ( very important),
temperature of oil for deep frying ,
Size of the Gulabjamun ( balls)
and consistency of sugar syrup .

Ingredients are :
Indian Cottage Cheese. 200 gms
Coconut flour. 25 gms
Almond flour. 25 gms
Cream. 2 tbsp
Baking powder. 1/2 tsp
Xanthum gum. 1/2 tsp ( For Gulabjamuns only )
Oil for fry
For Sugar Syrup :
Water. 1/2 litre
Sweetener. 3 tbsp
Xanthum Gum. 1/2 tsp
Cardamoms. 2
Method for Sugar Syrup :
1. Add Xanthum gum to the (room temperature ) water and mix it well .
2. Boil the mixture until it becomes thick and a bit Syrupy in consistency.
3. Sieve the mixture so that lumps are filtered out.
4. Add sweetener and cardamom and boil for few more minutes.
Method for Gulabjamun:
1. Knead the cottage cheese until it becomes smooth .
2. Add coconut flour , almond flour , baking powder and Xanthum gum .
3. Knead the mixture with cream .It will take around 5 minutes. Rest it for atleast 10 minutes.
4. Make balls from the mixture.
5. Heat the oil , the oil should be at medium temperature ,neither too hot nor too cold .
6. Add the balls in to the oil , keep changing the side
7. Fry them for 5 to 7 minutes or until it becomes brown in colour.
8. Add the sugar syrup to the Gulabjamuns or vice versa .
9. Leave the Gulabjamun for atleast half an hour before serving.
Method for pancakes :
1. Knead the cottage cheese until it becomes smooth .
2. Add coconut flour , almond flour , baking powder .
3. Knead the mixture with cream .It will take around 5 minutes. Rest it for atleast 10 minutes.
4. Make balls from the mixture.
5. Place the balls on baking tray .
6. Bake them for 15 minutes per side in preheated oven at 180 deg Celsius.
7. Change the side and bake for 15 minutes.
8. Add the sugar syrup to the pancakes .
9. Dip it for atleast 15 minutes before serving.
10. Garnish them with chopped dry fruits .

Indian Cottage Cheese. 6 gms
Coconut flour. 5 gms
Almond flour. 1 gms
Total Net Carbs : 12 gms
No. of pieces. 12
Net Carbs per piece. 1 gms
