Karahi paneer - stir fry veggies in gravy

Karahi paneer is a very popular classic north Indian dish prepared using karahi masala which brings out the aroma of roasted spices. The stirred fry chunks of bell peppers, onions and paneer are so flavorful and delicious. Can be prepared with or without gravy.
Ingredients:
2 small onions cut into big chunks
1 bell pepper cut into big chunks
250gms paneer cut into cubes
for karahi masala:
1tsp cumin seeds
1/2 tsp coriander seeds
few peppercorns
3 red whole chilies
1/4 fennel seeds
for gravy:
1 onion finely sliced
2 large tomatoes (puree)
1/4 cream
1tsp sugar
1/2 tsp coriander powder
1/3 chili powder
1/2tsp garam masala powder
1/2tsp dry fenugreek leaves
salt to taste
oil for cooking
Method:
1. Dry roast karahi masala. Cool it, and grind it into powder.
2. Cut onion, bell peppers, and paneer into big chunks and stir-fry them in a little bit of oil. Keep them aside for adding it to the gravy.
3. Saute finely sliced onions till they wilt
4. Add in ginger garlic paste and sauté, add tomatoes stir and mix and also add in dry spices and cook until reduced to half in quantity and oil stars to separate.
5. Once the masala is cooked add around 1/2 cup of water to loosen the consistency.
6. Add in stir fried veggies and paneer mix gently
7. Finish with fresh coriander leaves and garam masala powder.
