Описание:
Haleem is the slowly simmered stew or kind of a porridge of meat and lentils traditionally cooked for a long hours.
Ingredients:
250gms haleem wheat and barley
3tbsp toor dal/split pigeon peas
1/4cup chana dal/ split chickpeas
1/4 cup urad dal/ skinned and split black gram
1/4cup masoor dal/ split red lentils
1/4cup moong dal/ skinned and split green gram
3tbsp rice
2lbs Beef meat
250gms onions sliced
1 tomato
3/4 yogurt
2-1/2 tbsp ginger paste (for meat and lentils both)
2-1/2 tbsp garlic paste (for meat and lentils both)
Salt or to taste
1tsp cumin seeds
1tsp black cumin seeds
4-5 black cardamom
1 cinnamon stick
2-3 bay leaf
5-6 cloves
2tbsp coriander powder
1tbsp red chili powder
1tsp turmeric powder
1tsp garam masala
1tsp cumin powder
julienne cut ginger for garnishing
Fresh coriander leaves for garnishing
Method:
1. In a pressure cooker pot add all the soaked lentils and grain, add 1-1/2 tbsp of ginger and 1-1/2 tbsp of garlic paste. Add generous amount of salt, cover the pot let it pressure cook it for 45 – 50 minutes.
2. In other pressure cooker pot heat some oil sizzle whole spices, add half of the sliced onions and sauté them till they get a nice light golden brown color.
3. Add meat stir and mix and sauté it for about a minute, add ginger garlic paste and sauté it with meat till it changes its color.
4. After about 4-5 minutes of cooking add 3cups of water cover the pot and let it cook for 25-30 minutes till meat becomes tender.
5. Once the meat is cooked separate meat from the bone, discard bones
6. Crush half of the meat with mortar and pestle to get fibrey texture in haleem.
7. And add half of the meat to the lentils and grains pot to blend it with the blender.
8. Do not blend the haleem for a very long time, just for 30-35 seconds.
9. After blending the haleem add the crushed meat. Stir and mix really well and let it cook for further 20 minutes. Keep stirring through out the cooking.
10. Delicious haleem is ready.
11. Garnish with cilantro, fried onions, and serve with lemon and chat masala
