Semolina coconut cake
This is such a delicious sweet desert with a perfect hint of lemon and flavour of coconut. Satisfies that craving of sweet tooth after dinner or lunch. Or enjoy it by itself for its yummy coconut flavour.
Ingredients:
1 cup semolina
1 cup desiccated coconut
3/4 cup sugar
1/2 cup yogurt
1/2 cup sour cream
3/4 olive oil
1 tsp baking powder
for syrup:
2 tbsp lemon juice
3 cardamom
3 tbsp sugar
1 cup water
3/4 cup chopped dryfruits
Method:
1. Preheat oven to 350f.
2. Mix oil and sugar. Add egg, sour cream, yogurt and. Mix everything until well combined.
3. In a bowl mix semolina, baking powder and desiccated coconut.
4. Transfer dry ingredients to the wet mixture. Mix until well combined.
5. Transfer it into a baking pan lined with parchment paper
6. Sprinkle chopped nuts of your choice.
7. Bake at 350f for 40 t0 45 minutes.
Prepare syrup
8. In a pan boil 1 cup of water add sugar and cardamom and lime juice. Boil the water to reduce it to 1/2 cup.
9. Once the cake is baked take it out of the oven, let it cool for 5 minutes and then pour syrup on the cake and let it soak.
Coconut semolina cake is ready.
