Hello everyone,
this week I am going to give you the recipe for a classic from the french patisserie: les Profiteroles!
For the dough or Pâte à Choux, for about 20-30 Profiteroles, you will need:
77g flour
62g Water + a little bit extra for later
120g eggs + 1 egg yolk
55g butter
62g whole milk
8g sugar
3g salt
For the chocolate glaze, you will need:
100g water
225g chopped chocolate or chocolate drops
40g fresh whipped cream
75g Sugar
1 pinch of salt
And for the Chantilly cream, you will need:
250g fresh whipped cream (35% Fat)
50g powdered sugar
Seeds of 1 vanilla bean
