How to Make Chocolate Profiterole (ASMR)
Ingredients
Choux Pastry
65g water( ¼ cup)
30g butter (2 tbsp)
3g salt (½ tsp)
3g sugar (½ tsp)
50g flour (½ cup)
2g baking powder (½ tsp)
2 eggs
Bakery Cream
250ml milk (1 cup)
65g sugar (⅔ cup)
10g starch (1 tbsp)
10g flour (1 tbsp)
1 egg yolk
5g vanilla powder (1 tsp)
40g butter (3 tbsp)
Chocolate Sauce
10g flour (1 tbsp)
5g starch (½ tbsp)
65g sugar (⅔ cup)
10g cocoa powder (1 ½ tbsp)
300ml milk (1 ¼ cup)
50g chocolate (½ cup)
10g butter (1 tbsp)
165°C (330°F) for 25 min
How to Cook
Preheat the oven to 165°C.
For the dough, heat the water, butter and salt in a pan over medium heat.
Add the flour to the mixture by stirring.
Cook the dough until excess water and lumps are gone (about 5min).
Transfer the dough to another bowl to cool. Add the baking powder.
Mix the eggs one by one into dough until the egg disappears completely and
Put the dough in a plastic bag.
Squeeze onto baking paper into 2-3 cm wide balls.
Bake in an oven at 165 degrees for 30 minutes until golden brown.
Take the cooked dough out and cool it at room temperature.
For the cream, beat the eggs and sugar beforehand.
Then add milk, starch and flour, mix and put on the stove.
Cook over medium heat, whisking constantly, until it has a custard consistency. Take the thickened cream from the stove.
Add butter and vanilla powder to the cream, make it homogeneous and smooth. Put the cream in a plastic bag.
When pastries at room temperature, make holes in the lower parts of the dough with the help of a knife and fill it with cream.
For the chocolate sauce, milk, flour, starch, sugar and cocoa are placed in a suitable pot and cooked by stirring constantly.
When it boils, it is lowered and cooked for 1 minute.
Add chocolate and butter while hot. It is left to cool at room temperature. It is mixed occasionally.
Pour the sauce over the stuffed pastries.
