These Brisket French Dip Sliders are built with melty provolone, buttery toasted buns, rich caramelized onions, and finished with a smoky au jus that’s made right on the pellet grill. We seasoned the brisket with my Prime 4 Ancho & Pasilla Chili Rub to give it that bold, smoky, award-winning flavor.

🧾 Recipe: Brisket French Dip Sliders with Smoked Au Jus
Featuring Prime 4 Ancho & Pasilla Chili Rub
Serves 4–6 | Total Time: ~1 hour

🧂 Ingredients
For the Sliders:
• 1½ to 2 cups leftover brisket (chopped or sliced)
• 6 slider buns (brioche or Hawaiian-style)
• 6 slices provolone or Swiss cheese
• 1 large yellow onion, thinly sliced
• 2 tbsp butter + 1 tsp olive oil (for caramelizing onions)
• 2 tbsp melted butter (for brushing buns)
• ¼ cup horseradish mayo (see below)
• Prime 4 Ancho & Pasilla Chili Rub – to season the brisket
• Prime 4 Compound Butter Rub – optional, for toasting buns
Horseradish Mayo:
• ½ cup mayo
• 1 tbsp prepared horseradish
• ½ tsp lemon juice
• Pinch of salt
(Mix together and chill)

For the Smoked Au Jus:
• 3 cups beef broth or bone broth
• 1 tbsp Worcestershire sauce
• 1 tsp soy sauce
• ½ yellow onion, sliced
• 2 cloves garlic, smashed
• Brisket trimmings or burnt ends (optional)
• 1 sprig fresh thyme (optional)
• Salt + pepper to taste

🔥 Instructions
1. Caramelize the Onions
• In a skillet, heat 2 tbsp butter + 1 tsp oil over medium-low.
• Add onions and a pinch of salt. Stir every few minutes for 20–30 minutes until deep golden.
• Optional: Add a splash of broth or pinch of sugar near the end.

2. Smoke the Au Jus
• In a cast iron pan or foil tray, combine broth, Worcestershire, soy sauce, onion, garlic, thyme, and brisket trimmings.
• Smoke at 225°F for 30–60 minutes.
• Strain and keep warm.

3. Toast the Buns
• Split slider buns.
• Brush insides with melted butter and sprinkle with Compound Butter Rub if using.
• Toast on grill or griddle until golden brown.

4. Reheat the Brisket
• Heat brisket on griddle or skillet with a splash of au jus.
• Season with Ancho & Pasilla Rub to taste.
• Add cheese, cover, and steam until melted.

5. Assemble Sliders
• Spread horseradish mayo on bottom buns.
• Top with cheesy brisket and caramelized onions.
• Cap with toasted buns.

6. Serve with Smoked Au Jus
• Pour jus into ramekins or shot glasses.
• Serve warm for dipping. Get that dunk shot.
