My dad taught me how to make Taishanese dumplings. His 家乡弯梳饺 that he grew up eating with his family.
TAISHANESE FAHN SOA DUMPLINGS 台山弯梳饺
6.5 oz of hydrated shiitake mushrooms
2 oz of dried shrimps
4 oz of Chinese sausages
1 lb 2 oz of pork belly
8 oz of water chestnuts
4 stalks of scallions
1 tbsp of minced ginger
1 tbsp of minced garlic
DOUGH (for the wrapper)
1 lb of wheat starch
5 oz of tapioca starch
2 oz of tapioca pudding starch
32 oz of boiling water
1/4 tsp of salt
1 tbsp of oil
SEASONINGS (for filling)
1/2 cup of wine
2 tbsp of oyster sauce
1 tbsp of soy sauce
1/2 tsp of salt
1/2 tsp of white pepper
1 cup of water
1/2 cup of cornstarch slurry
1/2 tsp of sesame oil
