Director of Collections and Public Programs, Ulrike Al-Khamis shares her recipe for German Apple Cake, a recipe from her inter-cultural household, where German, Iraqi and Scottish cuisines intermingle.
RECIPE
For a cake tin 26 or 28 cm in diameter
Ingredients:
750g apples, peeled, quartered and scored
125g soft butter (preferably unsalted, but salted will do)
100g sugar
200g flour
Some Vanilla essence to taste
A little salt (don’t use if you are using salted butter)
3 medium sized eggs
2 level teaspoons baking powder
2 level tablespoons milk
For the glaze: two table spoons apricot jam and one tablespoon water
Method:
Grease the cake tin and peel, quarter, score the apples.
Preheat the oven to 180 centigrade (or 160 centigrade for fan ovens)
Whisk the butter in a bowl until creamy. Gradually add the sugar, vanilla essence and salt. Add the eggs one by one, whisking in each one for about half a minute before adding the next one.
Mix the flour and the backing powder and gradually sieve into the egg mixture, adding the two tablespoons of milk in the process.
Scoop the dough into the cake tin and level before laying out the apple quarters all across the surface.
Place the cake tin into the lower third of the oven and bake for 45 minutes.
Shortly before the cake is ready, prepare the glaze by passing the apricot jam through a sieve and then heating it with the water in a small saucepan, bringing the mixture to a low simmer. Once the cake is out of the oven, glaze it with the mixture immediately and leave to cool.
