In this video I’m sharing my Lemon Meringue Pie Recipe and Techniques that I have found to be helpful and make the difference in making a great pie!

Recipe:
Pie Crust
2 ½ cups of Flour
½ tablespoon Sugar
½ teaspoon salt
1 cup of butter (really cold)
6 tablespoons water (really cold)
Cut up the butter and place in the freezer while you measure out the dry ingredients.
Blend together flour, sugar and salt. Mix in butter. Add 1 Tablespoon of the really cold water, one tablespoon at a time until combined into dough.
Wrap dough in saran wrap into 2 disks and refrigerate 30-60 minutes.
Roll out over floured surface and use crust as needed.
Lemon Meringue Pie Filling
1 cooked pie crust
1 cup of white granulated sugar
2 tablespoons of flour
3 tablespoons of cornstarch
¼ teaspoon salt
2 lemons - zest and juice
4 egg yolks
2 tablespoons of butter
Preheat oven to Bake 350 degrees.
In a medium saucepan mix together the dry ingredients.
Stir in water, lemon zest and juice until dissolved.
Cook over medium heat, stirring frequently until it begins to boil.
Take some of the mixture and combine it with the egg yolks in a separate bowl.
Beat egg yolk mixture back into the saucepan, continuously mixing.
Add 2 tablespoons of butter and keep stirring until the butter melts.
Pour mixture into baked pie shell.
Meringue
4 egg white
6 tablespoons of sugar
To make meringue, in a large glass bowl beat the egg whites and slowly add in sugar.
Keep beating until peaks form.
Spread meringue over the pie, sealing the edges.
Bake for 10 minutes or until the meringue is golden brown.
Let site and then enjoy warm or refrigerate to eat cold.
