CREAMY MUSHROOM PASTEL ✨

1 cup carrots, diced
1 cup potatoes, diced
juice of half a lemon
1/3 cup green bell pepper, diced
1/3 cup red bell pepper, diced
1/3 cup nutritional yeast
1 cup coconut cream
2 tbsp. soy sauce
425 g whole canned mushrooms, drained (or fresh button mushrooms)
5 cloves garlic, diced
1 onion, diced
2 tbsp. maple syrup
1 tsp black pepper
1/4 cup water


Method

In a cast iron skillet, sauté the garlic, onion, carrots and potatoes. Mix them well and cook for 5 minutes. Add the mushrooms, black pepper, red bell pepper, green bell pepper, soy sauce, maple syrup and lemon juice. Let it cook for another 3-5 minutes. Add the coconut cream, give it a good stir and let it simmer for 10 minutes. Now, add the nutritional yeast and let it blend well with the mixture. Pour 1/4 cup of water, turn off the heat and continue mixing until all ingredients are well incorporated. Serve hot and enjoy with bread or steamed rice! 😋
