Recipe:
THANKSGIVING LASAGNA
SERVES 4
INGREDIENTS
2c water
2c rolled oats
1/8c coconut aminos (2 Tbsp)
1/2c chopped walnuts
1/4c plain bread crumbs
1/2c chopped dried cranberries
1 stalk celery, diced (optional)
1/4c nutritional yeast
1 egg replacer (powder)
1/2 tsp garlic powder
1/2 tsp dried basil
1/2 tsp onion powder
1/2 tsp finely chopped fresh sage
1/2 tsp finely chopped fresh rosemary
Oil free gravy (We used a mushroom gravy cube, boiling water, water sauted onions and cornstarch)
Mashed sweet potatoes (approx 3 mashed with a splash of plant milk, salt and a drizzle of maple syrup)
Cranberry sauce
Vegan, oil free Cornbread (Half a loaf needed for this recipe. We used the Brand New Vegan recipe and added 1/3c fresh corn.)
INSTRUCTIONS
Line a square baking dish with parchment paper.
Preheat oven to 350 degrees.
Put all ingredients except oats, cranberries and egg in a deep skillet and bring to a boil over medium-high heat.
Stir in rolled oats and remove from heat. Stir in egg replacer slowly. Slowly add breadcrumbs if mixture is too moist. Stir in cranberries.
Scoop mixture into parchment-lined baking dish and bake for 15 uncovered, then another 15 minutes covered with foil.
Let cool, flip onto a board and remove parchment.
Return the casserole to the baking dish.
Layer gravy, sweet potatoes, cranberry.
Top the dish with slices of cornbread.
Cover with foil and heat for 15 minutes.
Cut into squares and serve with gravy and cranberry sauce.
