Today we’re making one of my favourite breads - multigrain bread from the Bouchon Bakery book. And this is going to be my version of a GBBO signature bread challenge from Episode 3, Season 1.
Soaker:
33 g rolled oats, 33 g sesame seeds, 33 g roasted sunflower seeds, 33 g flax seeds, 33 g quinoa
FInal dough:
311 g all purpose flour, 89 g whole wheat flour, 44 g rye flour, 251+60 g cold water, 89 g ripe starter, 3 g yeast, 10 g salt.
