INGREDIENTS FOR DOUGH:
Maida 1 cup
Oil 2 tsp
Salt ¼ tsp
INGREDIENTS FOR STUFFING:
Oil 2 tsp
Finely chopped garlic 2 tsp
Finely chopped ginger 2 tsp
Finely chopped green chillies 1 tsp
Finely Chopped onion 2 tbsp
Finely chopped bell peppers 2 tbsp
Chopped mushrooms ¼ cup
Soya sauce ½ tsp
Salt, pepper powder and Sugar as per taste
Crumbled paneer ½ cup
INGREDIENTS FOR SCHEZWAN SAUCE:
Oil 1 tbsp
Chopped garlic 1 tbsp
Chopped ginger 2 tsp
Chopped coriander stalks 1 tbsp
Bell peppers ¼ cup (diced)
Onion 1 (peeled and diced)
Red chilli paste 1 tbsp
Tomato ketchup 2 tbsp
Soya sauce 2 tsp
Vinegar 1 tsp
Salt, sugar, pepper as per teste
Corn flour 1 tbsp + water ½ cup
Chopped spring onion leaves ¼ cup
METHOD:
1) To prepare the dough, combine all the ingredients for the dough and bind it into a tight dough using the required quantity of water. Knead it very well. Keep it covered for 10 minutes.
2) To prepare the stuffing, Heat oil, add garlic, ginger, green chilli and onion. Sauté till onion turns little translucent. Add capsicum and mushrooms. Add soya sauce, black pepper powder, salt and sugar. Mix it well. Switch off the flame and add grated paneer.
3) Roll the prepared dough into a thin roti with the help of dry flour. Cut it into round shaped discs with the help of a round cutter or tin lid.
4) Take one disc, place some stuffing in the center, then apply little water on the edges of the disc. Now fold it into a momos shape shown as in the video. Steam these momos in a steamer for 10 - 12 minutes.
5) Heat butter in a nonstick pan. Arrange stemmed momos on it. Roast them on medium flame till they turn a little red from both sides.
6) To prepare schezwan sauce, Heat oil, add chopped garlic, ginger and coriander stalk. Sauté for 30 seconds. Add diced bell peppers and onion. Add red chilli paste, tomato ketchup, soya sauce, vinegar, salt, sugar and black pepper powder. Sauté for 30 seconds. Add cornflour mixed with water. Cook, stirring continuously till it starts boiling and thickens. Add butter sauted momos in the above sauce. Mix gently and cook for a minute. Garnish with chopped spring onion leaves and serve immediately.
