INGREDIENTS:
Full cream milk 1½ liter
Citric acid ½ tsp
Sugar 6 tbsp
Semolina 3 tbsp
Ghee 1 tbsp
Cardamom powder 1 tsp
Saffron ½ tsp
Nutmeg powder 1 pinch
Sliced almonds and pistachios 2 tbsp
METHOD:
1) Boil milk. Switch off the flame. Keep it 2-3 minutes. Remove fats from the top of the milk and keep aside for further use.
2) Dissolve citric acid in ½ cup of water. Add this water gradually in milk and keep string gently. As milk gets curdle, stop adding water.
3) Strain it and separate chhena and whey water. Then wash chhena by adding 2 cups of water. Gently squeeze the chhena and remove excess water from it. Reserve this water to adjust the consistency of chhena poda mixture.
4) Mash chhena gently. Add sugar, semolina, and reserved milk fats. Add ghee, cardamom powder, saffron. Add nutmeg powder. Mix it well till sugar melts in it. If mixture is little thick add same reserved whey water and adjust the consistency. Add sliced almonds and pistachios and mix gently.
5) Grease baking tin. Line it with butter paper. Add chhena poda mixture in it. Level it from top. Garnish with sliced almonds and pistachios.
6) Take a deep pan. Add 1 cup of salt in it. Place a metal stand in it and let it heat on medium flame for 2-3 minutes. Place the chhena poda pot on the stand. Cover the pan with lid and let it bake for 30-35 minutes or till chhena poda turn golden from top and starts leaving sides of the pot.
7) Let the chhena poda cool down slightly. Then carefully remove it from the pan.
8) Cut and Serve little warm.
