These for baked potato fillings are super satisfying and hearty. Turn your baked potatoes into a complete dinner by stuffing them with deliciousness.

Topping 1: Creamy Mushroom
1 onion
1 lb sliced mushrooms
A splash of water
3 cloves minced garlic
1 tsp chopped fresh rosemary
125 ml white wine
1 tsp salt
250 g full-fat sour cream
Fresh parsley

Topping 2: Saucy Italian Sausage
1 Tbsp oil or butter
1 onion
1/2 bulb fennel
1 lb mild Italian sausage
1 can crushed tomatoes
1 tsp salt
50 g frozen peas
1 Tbsp chopped fennel fronds

Topping 3: Tuna Salad
Just make your favourite tuna salad. I'm not ready to declare a go-to recipe for that just yet. Make sure it's fairly saucy though! (Egg and chicken salad are also fantastic in baked potatoes.)

Topping 4: Cauliflower & Chickpea Curry
1 Tbsp coconut oil
1 onion
3 Tbsp tomato paste
1 Tbsp curry powder
1/2 tsp turmeric
2 tsp garam masala
1 can coconut milk
1/2 head cauliflower
1 small can (400g) chickpeas
Sweet chili sauce & fresh cilantro to finish
