Etli Kara Lahana Sarması
Ingredients:
1 bunch collard greens 1 onion, finely chopped 1⁄2 lb ground beef
1 cup rice, rinsed
2 tablespoons vegetable oil
1 tablespoon tomato paste
1 tablespoon red pepper paste 1⁄2 bunch parsley, finely chopped
Directions:
Salt & pepper Cumin
Dried mint
Red pepper flakes Sauce:
2-3 tablespoons tomato sauce 1 spoon vegetable oil
Wash the collard green leaves. Cut the stems off and boil in salted water. Transfer the cooked leaves to a bowl filled with cold water. In a large bowl combine all the ingredients with rice and ground beef. Now the rolling part: put a leaf on a flat surface such as a cutting board, your counter, or a tray. Cut the leaf lengthwise into two and take out the middle stem. Place about 2 tbsp stuffing on the leaf. Do not over stuff them or they will come undone while cooking. Fold the sides and roll. Repeat until you stuffed all the leaves. Line the bottom of the pot with some (damaged or accidentally ripped) leaves. Place the stuffed collard green rolls in a pot. Once all rolls are placed, cover with remaining leaves and put a clean plate on top for weight. Pour some water, tomato sauce if desired. Cover, and let it cook on high until it boils. Then reduce the heat and simmer for about an hour or until the rice in the stuffing is fully cooked.
