🥗 Ingredients
4–5 Karela (Bitter Gourd), sliced
2 medium onions, finely chopped
2 tomatoes, chopped
2 green chilies, chopped
1 tsp garlic, chopped
oil
½ tsp turmeric powder
1 tsp red chili powder
Optional: 1 tsp amchur (dry mango powder)
Salt to taste
Fresh coriander leaves for garnish

👩🍳 Method
Prep Karela:
I peeled the karela, removed the inner pulp and seeds, and kept the peel separately
I sprinkled salt over the pulp and peel to reduce bitterness.
I steamed the peel
Cook Base Masala:
In a pan, I heated 2 tablespoons of oil
added cumin and mustard seeds, then garlic and chilies.
I added onions, sautéed them, and let them steam. After that, I added tomatoes and the pulp mixture
Cover and steam for 2 minutes until soft`
Mix turmeric, chili powder, and salt. Cook until masala releases oil.
Stuffing:
This masala is now ready to stuff into the steamed karela
Fill each karela tightly with the masala.
Add Karela:
Heat more oil in the pan, place the stuffed karela carefully, and shallow fry them.
Turn them gently so the masala doesn’t spill out.
Steam them again for a few minutes, turning sides until evenly cooked.
Finally, spread the leftover masala around the karela for extra flavor.
Finish:
our spicy, flavorful Masala Karela is ready!
If you don’t like too much bitterness, add amchur powder or lemon juice at the end.
Garnish with coriander leaves.
Serve hot with roti or rice.
