Lavender Shortbread on the new Lavender Cooker!

In celebration of our new Lavender cooker colour for spring 2023, we asked chef and food writer, Claire Thomson to cook up some Lavender Shortbread. You will need:
200g plain flour
60g cornflour
120g softened unsalted butter
Big pinch salt
130g caster sugar
Good few sprigs of fresh or dried lavender
Zest of 1 lemon finely grated
Method:
1. Turn your top oven down to 180c and line a dish with greaseproof paper. Claire used a square tin measuring 23cm x 23cm.
2. In a large mixing bowl, sift the two flours together with the salt and about half to 1tsp of lavender.
3. Beat half the sugar and the lemon zest into the very soft butter until combined. Add this to the flours and gently mix, like you would for pastry, using your fingertips, until the flour and the butter form a fine, sandy crumb.
4. Press this mix into the lined baking dish about 2 - 3 cm thick and bake in the oven for around 20 minutes until crisp on top and very faintly golden at the edges. Remove from the oven.
5. Drench the cooked shortbread with the remaining sugar and a few more sprinkles of lavender flowers and, with the shortbread still very hot, use a thin sharp knife to cut to size. Do not remove from the tin, leave until completely cool.
6. Remove from the tin and store in an airtight container (if it lasts that long!).
