椒鹽粟米 Salt And Pepper Sweetcorn
材料 Ingredients
粟米 2條 / 2 cobs sweetcorn
蒜頭 8瓣 / 8 cloves garlic
炸蒜 30克 / 30g fried garlic
乾蔥 1粒 / 1 shallot
椒鹽 1湯匙 / 1 tablespoon salt and pepper mix
指天椒 1隻 / 1 bird’s eye chilli
紅尖椒 半條 / half red pepper
蔥 1棵 / 1 stalk scallion
做法 Method
1. 粟米洗淨,放入鍋中隔水蒸6分鐘,熄火焗5分鐘。
Rinse the sweetcorn, and steam on a rack for 6 minutes. Turn off the heat, keep the lid on and sit for 5 more minutes.
2. 蒜頭和乾蔥切碎;蔥和指天椒切粒;紅尖椒切絲。
Finely chop the garlic and shallot, dice the scallion and chilli, shred the red pepper.
3. 粟米切去頭尾部份,再一開二;將粟米段垂直放穩,用菜刀於粟米中間切半,再切半,將整條粟米共切開成八細件。
Cut off the two ends of the sweetcorn cobs, then cut in half. Place a section upright and make sure it sits stably. Chop each section in half lengthwise, then chop the halves in half again. Cut each whole sweetcorn cob into eight pieces.
4. 粟米印乾水份,撲上生粉備用。
Pat dry the sweetcorn, coat them with cornstarch and set aside.
5. 加油落鍋,開中火燒熱,用半煎炸方式將粟米炸至金黃,盛起備用。
Add oil to a pot and heat it over medium heat. Fry the sweetcorn until golden, remove for later use.
6. 另一鍋中加油,開中火燒熱,下蒜粒和乾蔥炒香,再加入指天椒和紅尖椒絲。
Add oil to another pot and heat it over medium heat. Sauté the garlic and shallot until aromatic. Then add the chilli and red pepper.
7. 加入粟米和炸蒜拌炒多1分鐘。熄火後撒上蔥花及椒鹽,拌炒均勻即成!
Add the sweetcorn, ried garlic and stir-fry for 1 more minute. Turn off the heat, sprinkle with some diced scallions, salt and pepper, mix stir-fry evenly, serve!
