Dahi Pakhala (ଦହି ପଖାଳ) is a traditional Odia dish made with rice, curd, and a variety of spices. It is a popular dish during the summer months, as it is believed to be cooling and refreshing. Dahi Pakhala is typically served with a side of alu bhatra ,badi chura, saga or fried fish etc.

The recipe for Dahi Pakhala:
Ingredients:
-2 cups rice
-6 cups water
-1 cup curd
-1 green chili, finely chopped
-2 tsp Paanch phodan
-1/2 tsp cumin seeds
-1/2 tsp salt
-1/4 tsp hing (asafoetida)
-1 sprig curry leaves
-Few coriander leaves/ pudina leaves/ lemon leaves for garnish
Instructions:
Wash the rice and drain.
In a large pot, combine the rice and water. Bring to a boil, then reduce heat to low and simmer for 15-20 minutes, or until the rice is cooked through.
Remove from heat and let cool slightly.
In a separate bowl, whisk together the curd, onion, green chili, paanch phodan, cumin seeds, turmeric powder, salt, and hing.
Pour the curd mixture over the cooked rice and mix well.
To serve, garnish with coriander leaves and enjoy Yummy Dahi Pakhala !
