This roast is traditional to Bavaria, southern Germany. This dark beer sauce from the liquid is more typical of Bavaria and is filled with flavor.
RECIPE INGREDIENTS: 2-3 Ib pork shoulder roast, 1/2 tsp caraway seeds, 1 clove garlic, 3/4 tsp salt, 1/2 tsp pepper, 1 tbsp olive oil, 1/2-1 onion, 1-2 carrots chopped, 1 cut up parsnip, 1 12fl oz dark beer, 1 tbsp butter, 1 tbsp all-purpose flour
INSTRUCTIONS: Preheat oven to 350•F Pat roast dry, score roast and apply rub on roast. Cut up vegetables and place roast in Dutch oven or roasting pan fat side down. Place all vegetables around roast, pour 3/4 of beer over meat & vegetables. Cover & bake 45 minutes. Remove, flip roast over, lightly salt. Place back in oven with LID OFF for about 1 hour, until inside temperature reaches 165•. Remove vegetables and let meat set. Make gravy with broth from roast. If necessary, add beef broth to pork drippings for more gravy. Serve with 2 sides. ( I served with German potatoes & purple sauerkraut) ENJOY
