Mutton Xacuti
🛒 Ingredients
For Roasting & Grinding (Xacuti Masala)
1 cup fresh grated coconut
8–10 dried red Kashmiri chilies
1 tbsp coriander seeds
1 tsp cumin seeds
10 picese black peppercorns
4–5 cloves
1 inch cinnamon
2–3 green cardamom
2/3 black cardamom
1 tsp fennel seeds
1 tsp poppy seeds (optional)
4/5 small onion (sliced)
2 tbsp Garlic ginger
2 tbsp oil or coconut oil
½ tsp turmeric powder
Salt to taste
Fresh coriander for garnish
👨🍳 Method
1️⃣ Roast the Masala
Dry roast coconut on medium heat until golden brown.
In the same pan, roast all whole spices and red chilies till aromatic.
Add sliced onion, garlic, and ginger; sauté till light brown.
Cool and grind into a smooth paste with little water.
2️⃣ Cook the Mutton
Heat oil in a heavy pan or pressure cooker.
Add chopped onions and sauté until golden brown.
Add tomatoes, turmeric, and cook till soft.
Add mutton and sauté 5–7 minutes on high flame.
3️⃣ Add Xacuti Masala
Add the ground masala paste and mix well.
Cook 5–8 minutes until oil separates.
Add 1½–2 cups hot water.
Cover and cook:
Pressure cooker: 4–5 whistles
Open pot: 45–60 minutes till mutton is tender
4️⃣ Final Touch
Adjust salt and consistency.
Simmer 5 more minutes.
Garnish with fresh coriander.
