The best change I ever made to my sourdough starter feeding routine

Feeding peak to peak is a great tactic to use to strengthen an overly acidic or weak starter. I've found that doing this as part of my regular starter feeding routine ensures my starter is virtually always super strong.
Feeding peak to peak is extremely inconvenient if you use small feeding ratios... for example, with 1:1:1 (equal parts starter, flour, and water), you'd have to refresh every 4-6 hours. No one has time for that!
So to do this on my schedule, I feed a 1:5:5 ratio (1 part starter to 5 parts flour and 5 parts water), and I usually feed twice a day (morning and night). If that's still too much, you can go even higher with your feeding ratio, like a 1:10:10.
No harm in feeding just once a day at this ratio (I do that when I'm too tired or busy). But if I can feed peak to peak, my starter loves it!
Since I stopped letting my starter sit fully deflated, my sourdough experience got a whole lot easier - better bread, loftier loaves, easier to handle dough.
I am in no way telling you you "have" to do this to make great sourdough. No way. I am only sharing that doing this myself has produced much better results. As with most things sourdough, there's a good/better/best way to do things, and sometimes good is good enough. Don't stress if you don't have the time or energy to feed this way. Keep doin' what you're doin'. Just know this is a tactic in your back pocket if you ever want to give it a go or have issues with the strength of your starter.
