Perfect side dish = sautéed spinach, and of course italian style by Nonna Antonietta. Fresh spinach, extra virgin olive oil, clove of garlic and salt - nothing more, nothing less for this dish to take form. Of course, you'll get the tastiest experience when spinach is in season, in Italy from March to May. But throughout the year, we promise, this is one of the most perfect complimenting side dishes whether it is fish, meet or vegetarian you are cooking.
All you need for 4 portions:
1kg fresh spinach
Salt
1 clove garlic
Extra virgin olive oil
How to:
1. Start by cleaning the spinach and cutting the root from the stalk. If the bunch of spinach is big, cut the stalk in the middle in smaller pieces.
2. Place all of the spinach to water and clean thoroughly to get rid of all the possible soil.
3. Boil a full pot of water and add salt once it is boiling.
4. Add the cleaned spinach leaves and close the lid. If not all get place at the same time, wait a little and add the rest - spinach gets much smaller as it is cooking.
5. Once all spinach is in the pot, put the lid on and let cook for 10 minutes.
6. Drain the water through colander and squeeze all of the extra water away from the spinach.
7. Place pan on heat and pour generously olive oil on it.
8. Clean the garlic, and as Nonna Antoinetta advices, remove the middle part called anima for less bitterness and better digestion.
9. Throw in the whole clove in the pan and add all of the drained spinach.
10. Cook on low temperature for about 10 minutes, so that the aromas of the spinach are released and mixed together with the garlic.
11. Remove from heat, let cool down and enjoy!
