🍔 Ingredients
Bacon Fresno Chili Jam:
3 strips thick-cut bacon, diced
2 Fresno chili peppers, finely chopped
1 tbsp (12.5g) brown sugar
1 tbsp (15g) apple cider vinegar
Smash Burger:
6 oz (170g) 80/20 ground beef, divided into two 3 oz balls
½ small yellow onion, very thinly sliced
2 slices American cheese
1 brioche bun, buttered and toasted
1 tbsp mayo
1 tsp yellow mustard
Salt & pepper, to taste
🔥 Instructions
1. Make the Jam:
– In a pan over medium heat, cook the bacon until crispy (about 3–5 minutes).
– Add chopped Fresno chilis and sauté for 2 minutes.
– Stir in brown sugar and apple cider vinegar. Simmer for ~5 minutes until thick and jammy. Set aside.
2. Prep the Burger:
– Form beef into two loose 3 oz balls.
– Thinly slice onions and prep your bun.
3. Smash It:
– Heat a cast iron pan or griddle until very hot.
– Place beef ball on the pan, top with onions, and smash down hard using a spatula or press.
– Season with salt and pepper. Cook 1–2 minutes, flip, and add cheese. Cook until melted.
4. Assemble:
– Toast the bun.
– Spread mayo on the bottom bun.
– Stack the two cheesy patties.
– Add a generous spoonful of the bacon Fresno jam on top of the patties.
– Spread yellow mustard on the top bun, then close it up.
