Ingredients:
1 cup Long Grain Basmati Rice (rinse well and soak for 20 mins)
2 tbsp Oil (or Clarified butter / Ghee)
1 medium size Beetroot, peeled and chopped into small pieces (or you can also use 1 cup of grated beetroot)
1/4 cup Green peas
1/2 cup Onion, chopped
1/2 tablespoon Ginger Garlic Paste
1 teaspoon Salt (as per taste)
1/2 teaspoon Lemon juice
Water
1 tablespoon Chopped Mint Leaves
1 tablespoon Chopped Cilantro / Coriander Leaves
5 to 7 Roasted Cashew nuts (optional)

Whole spices -
2 Green Cardamom
3 Cloves
1/4 teaspoon Cumin Seeds
1 Bay Leaves

Ground spices -
1/4 teaspoon Chili powder
1/2 teaspoon Coriander powder
