Ingredients
4 tbsp Unsalted Butter, divided
1 lb mushrooms sliced 1/4" thick
1 small (1/2 cup) Onion chopped
1/4 tsp pepper or to taste
1 tbsp Minced Garlic
2 cup Long grain Basmati Rice (rinse and soaked for 20 mins)
2 tsp Italian seasoning
2 tbsp Soy sauce
2.5 cups Low sodium Vegetable broth or any type of broth you have
1 tsp Salt (as required)

Garnishing:
1 tbsp freshly chopped cilantro
