Ayam Penyet is an Indonesian dish (translated literally as smashed fried chicken) whereby the fried chicken is smashed with a food hammer to make the meat soft, juicy and tender inside, yet crispy on the outside. It is best served with crispy crumbs, tempeh (traditional Javanese food made from fermented soybeans) and the heavenly chilli that you will be learning to make today!
