这道香茅炸鸡再配上椰浆饭是新马人最爱吃的美食之一。注意事项一,香料别捣烂只要捣细就可以了,注意事项二,最后炸香料要一直拌匀,上色后马上撈起。
材料 A 捣细
4 支香茅(切段)
1 粒大葱
5 粒蒜头
2 吋姜
2 吋南姜
1 粒 2吋黄姜
1 湯匙芫荽粒
1 湯匙大茴籽
半湯匙 亚参膏加入4 湯匙水拌匀
材料 B 腌料
800 g 鸡肉块
捣细香料
1 湯匙肉类咖喱粉
1 湯匙辣椒糊
1 小匙盐
半小匙胡椒粉
4 支咖喱叶
1 湯匙粘米粉(过后才加)
2 湯匙玉米粉(过后才加)
Material A mash
4 stalks lemongrass (cut into sections)
1 green onion
5 garlic cloves
2 inches ginger
2 inches southern ginger
1 2 inch yellow ginger
1 tbsp cilantro grains
1 tbsp fennel
Add half a tablespoon of assam paste to 4 tablespoons of water and mix well
Ingredient B Marinade
800 g chicken nuggets
Pounding spices
1 tbsp meat curry powder
1 tbsp chili paste
1 tsp salt
1/2 teaspoon ground pepper
4 sticks curry leaves
1 tbsp sticky rice noodles (added later)
2 tablespoons cornmeal (added later)
