HIGH PROTEIN LEMON BLUEBERRY MUFFIN - single serve
(What you need)
1/2 cup quick oats
1 scoop Women's Best vegan protein - code:ABBY20 to save 20% off at https://womens.best/abby
1/2 tsp baking powder
Dash of salt
2 tbsp sugar or stevia 1:1 baking blend
1/4 cup Greek yogurt
2-4 tbsp almond milk
1/2 tsp vanilla extract
1 tbsp lemon zest
1/4 cup blueberries
(What to do)
1-Blend oats into a flour, then combine all dry ingredients in a bowl.
2-Continue mixing as you add in almond milk and Greek yogurt - mixing until no clumps remain. Once mixture is smooth, add in vanilla extract and lemon zest.
3-Line a ramekin with a jumbo muffin cup (or spray with nonstick spray), then carefully fold in dough and blueberries - layering as you go to avoid blueberries turning everything blue.
4-Bake for 20-25 minutes at 350F or until a toothpick inserted in the centre comes out clean. Enjoy!
