Ingredients: (23 cm diameter)
Butter - 130 g.
Sugar - 110 g.
Eggs - 2 pcs.
A pinch of salt
Flour - 110-120 g. (if not using almond flour, use 160 g. of regular flour)
Almond flour - 50 g.
Baking powder - 5 g.
Almonds - 200 g. (blanched, chopped, and roasted)
Milk - 50 ml.
Butter - 60 g.
Sugar - 70 g.
A pinch of salt
Bake the base for about 20 minutes at 180 °C / 356 °F and another 10 minutes with the nuts at 200 °C / 390 °F.
In a bowl, combine the softened butter and sugar. Beat well with a mixer for several minutes, until the mixture lightens in color. Next, add the eggs and salt and beat with a mixer for a few more minutes until smooth.
In a separate bowl, combine the sifted flour, baking powder, and almond flour (if desired). Mix well and add to the beaten mixture. Knead the soft dough with a spatula or mixer on low speed.
Pour the finished dough into the pan and spread it evenly. Next, place the pan in an oven preheated to 180 °C / 356 °F and bake for about 20 minutes.
While the base is baking, prepare the nut layer for the cake. To do this, combine the milk, butter, sugar, and salt in a skillet. Place the pan over low heat and simmer until the mixture thickens slightly and the sugar dissolves. Next, add the blanched almonds and mix well. Cook for a few more minutes and remove from the heat. I blanched the almonds in advance, cut them into strips, and then fried them in a pan.
TIP! Do NOT prepare the nut layer for the pie in advance, as it will be difficult to spread it over the surface of the pie later. Start preparing it a few minutes before the base is ready.
Remove the finished pie base from the oven and spread the almond-caramel mixture evenly over it. Increase the oven temperature to 200 °C / 390 °F and bake the cake for another 10 minutes.
Easy Almond Pie is ready. Let it cool slightly and serve.
