Strawberry pastry is one of those dessert nobody can resist! By whisking heavy cream into pastry cream, it helps to lighten the texture and enhance the flavor. The combination of juicy and aromatic strawberry, rich vanilla flavor custard and the crunchy tart shells make is dessert very rich in texture and flavor. It's a must keep recipe for all bakers, you can replace pair it with any seasonal fruit!
Baking Tips:
can brush a thin layer of egg white inside tart shell, and bake it for 1-2minutes until it's dry. This will create a barrier to keep out moisture from pastry cream. It'll help to prolong the crunchy texture of your tarts.
tart shell is fragile, be careful when filling in pastry cream
after filling pastry cream in tart shells, can refrigerate for 30-60minutes, so fruits won't sink into custard as much.

烘焙筆記:
塔皮要酥脆才好吃,做了就要當天吃完。可以在塔皮快烤好前2分鐘,把塔內部刷上一層薄薄的蛋白,再回烤1-2分鐘,讓蛋白乾燥。這樣可在灌入卡士達醬後,延長塔皮的酥脆度
塔皮酥脆,擠入卡士達醬時要小心操作
卡士達醬灌入塔皮內後,可冷層30-60分鐘,再擺上水果。避免水果果凍下陷到卡士達醬內。
水果可刷上一層鏡面果膠,讓水果色澤更美。若是沒有果膠,可用杏桃果醬取代。將果醬低溫加熱至液態,可當作鏡面果膠使用。

175 cake flour
70 powder sugar
90 butter
1/4tsp salt
1/4tsp vanilla powder
1/2 egg (half an egg)
《Pastry Cream》
250 milk 牛奶
3 egg yolks 蛋黃
70 sugar 糖
20 butter 奶油
13 corn starch
13 cake flour 低筋麵粉
1/2 vanilla bean 香草莢
80 heavy cream 鮮奶油
《Fresh Fruit》
1box fresh strawberry
some clear glaze (optional)
