Marsmallows Cupcakes
Ingredients: ( for 12 cupcakes)
5 tablespoons butter, room temperature
2/3 cup white sugar
1 large egg
1/2 cup warm whole milk
1 - 1 1/2 mini marsmallows or regular marsmallows cut in pieces
2 cups all- purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
Cut your marsmallows in small pieces.
Blend together the butter with the sugar for 2 - 3 minutes. Add the egg and mix. Then pour the warm milk and continue beating. You can use a standard mixer. Pour the marsmallows and mix with a spatula. Mix the salt, baking powder and the flour. Pour the wet ingredients over the dry ingredients and mix all the ingredients, but don´t overmix! Fill with this batter a lined muffin tin and bake at 350 F for 25- 30 minutes.
These cupcakes are so delicious and perfect for a kids birthday party. Enjoy!
