Freshly milled flour behaves differently from store-bought flour — it absorbs water more slowly and benefits from a short rest.
In this bake, I prepare soft buns using a simple, slow process, including a 30-minute autolyse and gentle kneading.
I also feed my rye sourdough starter, getting ready for tomorrow’s purple wheat bread.
