Ingredients
Pumpkin/Kaddu - 1 big bowl
Green Chilli - 2 cut into long pieces
Ginger - 1/2 inch piece chopped or grated
Tamarind/Imli Pulp - 1 Tablespoon
Coriander Leaves - A handful chopped
Jaggery powder/Grated Jaggery/Gud - 1 Tablespoon or as per taste
Mustard oil - 2 Tablespoon
Cumin seeds/jeera - 1/4 Teaspoon
Mustard seeds - 1/4 Teaspoon
Fennel seeds/saunf - 1/2 Teaspoon
Fenugreek Seeds/danamethi - 1/2 Teaspoon
Onion Seeds/kalonji - 1/4 Teaspoon
Turmeric powder - 1/4 Teaspoon
Red chilli powder - 1/2 Teaspoon
Hing/Asafoetida - a pinch
Coriander powder - 1 Teaspoon
Garam masala/All spice mix - 1/2 Teaspoon
Cumin/Jeera powder - 1/2 Teaspoon
Salt - as per taste
Instructions
Cut pumpkin in square pieces. Take oil in a pan. Heat it and put all the spices mentioned in achaari masala.
Heat mustard oil in a pan. Add asafoetida.
Add fenugreek seeds, fennel seeds, cumin seeds, onion seeds/kalonji, and mustard seeds. Let the seeds crackle.
Add chopped ginger and green chilli to the pan and saute them for a few seconds.
Add pumpkin pieces to it and saute the mix on medium flame for 2 to 3 minutes.
Then add salt, turmeric powder, and coriander powder. Mix well, cover with a lid, and cook it for 5 to 7 minutes or until the pumpkin is completely cooked. Stir it in between.
Once it gets cooked, add red chilli powder, garam masala, cumin powder, jaggery powder, and tamarind pulp. Mix well. Cook for a minute and then turn off the flame. Garnish it with chopped coriander leaves.
